Walk-In Cooler Temperature: What to Hold, What to Log
Most walk-in cooler emergencies announce themselves days early — as a slow drift in the temperature. Knowing what to watch, and writing it down, is the cheapest maintenance there is.

The number that matters
Cold-holding food is generally kept at 41°F or below. A walk-in is usually set a few degrees under that — many kitchens run between 34°F and 38°F — so that normal door openings do not push product past the limit.
Measure with a calibrated probe thermometer placed in a container of water or a product simulant near the middle of the box, not just by trusting the controller's display. Controllers can drift or read the air at the sensor rather than at the product.
What to log, and when
- Box temperature at opening and again before close
- Time and temperature after deliveries
- Any alarm, defrost event or unusual noise
- Who checked it — a name beside every reading
Patterns worth acting on
A box that reads 36°F in the morning and 41°F by late afternoon is telling you something. Common culprits are a dirty condenser that cannot reject heat during the busy part of the day, an evaporator coil that is icing over, or a door that is no longer sealing.
A single bad reading after a long delivery is normal. A trend that creeps up over several days is not.
Habits that keep the box steady
- Keep product several inches off the evaporator so air can circulate
- Shelve by speed of use so staff are not holding the door open searching
- Close the door fully each time — never prop it
- Keep a clear path around the outdoor condensing unit
When to call
Call a technician if the box will not hold temperature, ice is building on the coil or ceiling, the compressor is cycling constantly, or the controller shows an alarm that does not clear. Move the most perishable items to a working unit while you wait, and ask your local health office how to handle product that was out of range.
