Make an equipment list
- Every refrigeration unit, ice machine, range, oven, fryer, dishwasher and coffee machine
- Make, model and serial number for each
- Where it is and what it feeds
- Date of last service
Write the workarounds
For each critical item, decide the fallback in advance: where product moves if the walk-in fails, which cooking line absorbs a dead fryer, how dishes get washed if the machine goes down.
Keep contacts in one place
- Your refrigeration and kitchen-equipment service number
- Utility emergency numbers and the building manager
- Your local health department contact
- The owner or manager who approves repairs
Train the line
Everyone on shift should know who to tell, what to write down and which breaker or shutoff to find. A cook who can say 'the fryer is not heating and the high-limit light is on' saves ten minutes of diagnosis.
Review twice a year
Update the list when equipment changes and rehearse the plan with new hires.
