Minutes 0–10: stop the heat gain

Keep the door closed as much as you can. Every opening dumps cold air and lets warm air in. Assign one person to the box, and have them pull only what the kitchen needs right now.

Minutes 10–30: protect what matters most

Shift the highest-risk product — raw proteins, dairy, cut produce, prepared foods — into reach-ins, other coolers or ice. Take a probe reading of core temperatures as you go and write the time down.

If a freezer is failing, resist the urge to open it repeatedly; a full, closed freezer holds temperature longer than an open one.

Minutes 20–40: gather what a technician needs

  • Make, model and serial number from the data plate
  • What the controller is displaying, including alarms
  • When you first noticed it and what changed (delivery, power flicker, cleaning)
  • Whether the evaporator fans are running and whether there is ice on the coil
  • Whether the condensing unit outside is running

Calling for help

Tell the technician what you see rather than what you suspect. Emergency visits are available on request; we will tell you plainly what we can do for your location and when, and we will not promise what we cannot deliver.

Afterwards

Ask what caused the failure, not just what was fixed. A frozen coil points to defrost or door problems; a silent fan points to a motor; a unit that will not start points to electrical components. Knowing which tells you what to watch for next time.
